About Chef Treviño

Chef Treviño is a well known Puerto Rican chef who has been a restaurant owner for more than a decade. Treviño was born and raised in Sunnyvale, California where he became fascinated with the kitchen. He began working as a young cook in the San Francisco Bay area while still in high school. Treviño moved to Puerto Rico in the early 90's to work as a chef for the inauguration of the El Conquistador Resort in Fajardo, Puerto Rico. Since then he has made a name for himself leading successful restaurants and competing (and winning) on Food Networks' Iron Chef. He recently moved to Orlando where he brought his renowned Latin-Asian fusion with El Buda, located in the heart of Downtown.

... That is important to note here: This is true fusion. This is not two different styles on a menu separately. Everything is blended in a way that is unique but thoughtful and most importantly, delicious!

My entree was Ropa Vieja Bibimbap a Gaballo. Basically a giant bowl of amazing. Rice, black beans, shredded beef that was seasoned to perfection (I'm a bit of a ropa snob), some other veggies I can't recall, and kale. OH THE KALE. WHAT THE KALE IS GOING ON HERE?! Ok, so, why is there kale in my ropa? Why do I even care? I don't particularly have an opinion on kale. I'm a take it or leave it guy. But holy crap, the kale in this dish was fantastic and really helped add a great flavor to this dish I wouldn't have even thought to add before. Vibrant, crisp, yummy! It stole the show, but that doesn't mean the rest of the bowl was blah. Quite the contrary. Also, they topped it with a fried egg...of course they did! and I"m glad for it!
